what to do with picky eater

I have a rescue dane that is 2 years old. he was very wormy, underweight had been neglected and abused over a year ago. i still am having trouble getting him to gain weight. He went from what my vet thought would be a small dane to on the larger size height wise but he still needs to gain a lot of weight. However, he doesn't finish his food. I feed him 3-4 times a day. he's on EVO, and i've tried every premium dog food on the market and have recently switched to evo because it's grain free. He's not wormy any more and never had any heartworms. His stools look normal and he's very active and happy. His coat is very shiny but I see ribs, hips and the entire pelvis. His eyes were very sunken in from being too thin when I got them and they still haven't pushed all the way forward. If I offer him a treat he gobbles it up like he's hungry but for regular food he turns up his nose. He sometimes wont' even touch a meal. I've tried givng him 30 mins to eat and take it away. I've tried leaving it out for him all the time. A schedule seems to work better. I've tried mixing in bacon grease and oil etc and then the next meal he wont' touch it if it's dry. Any suggestions would be appreciated.
